In this role

As the Sparkling Winemaker, you are responsible and accountable for the implementation, efficiency and overall performance of the sparkling program in the winery, including tirage, riddling and disgorging.

You will work with the Winemaker / Manager and senior winemakers to ensure wine quality, stylistic direction and regulatory compliance of brands within your portfolio.

Key accountabilities include


  • Drive sparkling winemaking program showing flexibility around changing wine conditions and cellar / winery capabilities to achieve the quality / style needed for sparkling brands.
  • Responsible for the production, tirage, riddling and disgorging of sparkling wine at in house facilities, including partnering production planning and scheduling.
  • Oversee the planning and implementation of all cellar and laboratory activities on a daily basis, including the distribution of cellar notes and data entry.
  • Monitor the daily ferment tastings during vintage.
  • Responsible for all tasting and blending decisions on sparkling wines to achieve the quality / style needed for responsible brands determined by the Senior Winemaker.
  • Monitor the status of all responsible brand blends produced, ensuring all bulk wine, packaging and bottling requirements are met.
  • Ensure all wines are stored and maintained according to quality control parameters.
  • Responsible for bulk wine and raw material inventories, including year-end and end of vintage stock takes.
  • Propose winemaking changes pre-vintage to improve wine quality.
  • Liaise with internal Viticulture staff to achieve the quality and style of responsible brands and ensure wine resources are aligned with the marketplace.
  • Propose and prepare tastings or information required for customer visits.
  • External public relation responsibilities for sparkling brands.
  • Liaise and coordinate with internal / external stakeholders of sparkling production.
  • Strategic

  • Drive an efficient, effective and best practice / continuous improvement approach to all production activities, including co-ordinating of trials and R&D projects.
  • Manage sparkling bulk inventory to maximise quality and value.
  • Responsible (day to day) for ensuring ongoing certification of all Risk Management Systems, including HACCP, ISO9001, ISO14000, AS4801 and engendering a culture of continuous improvement in the performance and outcomes of all these programmes.
  • Leadership

  • Represent the Company in regional Winemaking groups and associations as appropriate and beneficial to the Company.
  • People leadership with direct reports.
  • Provide leadership to cellar team
  • Administrative

  • Manage trade and wine show sample processes.
  • Ensure all label integrity program data is up to date.
  • EQMS data entry and tracking.
  • Undertake sample request preparation, processing and tracking.
  • Accurate and timely wine and retail information sheet data inputs.
  • Involvement in filling out customer retail information sheets.
  • Other accountabilities include

  • Any other projects / tasks as reasonably required by Petaluma.
  • Comply with all SEQ policies and procedures.
  • Essential knowledge and skills are

  • Demonstrated skills in wine assessment
  • Ability to work autonomously and as part of a team
  • Intermediate computer literacy (MS Office, databases)
  • Required experience is

  • At least 2-3 years cool climate winemaking experience
  • Experience in sparkling wine production (highly desirable)
  • Australian Wine Show judging experience (desirable)
  • Essential qualifications are

  • A tertiary qualification in winemaking or a related discipline
  • Physical and other requirements

  • Driver's licence
  • Forklift licence (or willingness to obtain)
  • This role involves manual handling
  • Some travel intrastate and interstate will be required
